Akishika in Osaka grows organic rice on their own farms and is committed to sustainable agriculture. This sake is pressed moto (the starter) so the alcohol is still lower at 10%, with higher residual sugars and richness. Dried fruit, lightly honeyed. Delicious with cheese and richer dishes. Drink over ice.
