Cantillon Fou' Foune

Cantillon is Brussels’ most iconic lambic brewery, producing traditional spontaneous-fermentation beers since 1900. Fou’ Foune is one of its most celebrated releases: lambic refermented with fresh Bergeron apricots and released annually in limited quantities.

The 2025 vintage is intensely aromatic, with ripe apricot layered over the wild, funky character of aged lambic. Brightly sour, dry, and beautifully complex, with pure fruit character and a long, tannic finish. Exceptional on its own or with roast duck, pâté, or washed-rind cheese.
