Daijiro Wataribune #2 Kimoto

Wataribune #2 is a local Shiga rice that's also an heirloom variety. The power and depth the rice brings is impactful and rich. The sake is full of umami but also well balanced with sharpness and a briny finish. 

Aged as nama on purpose, the complexity is notable and keeps you coming back for more. Can be enjoyed at many temperatures and over days or even weeks.
