Kaze no Mori Omachi 807

Made with Omachi polished to 80% and brewed with yeast #7. 

The heirloom rice lends itself to more minerality, slice and umami richness. Due to the polish (or lack of it), the sake is rich and deep, with rice-y sweetness and fermentation notes. 

The sake opens up beautifully over time.
