A retrospective tasting of the famed Matsumoto ID series sakes. These have been in the cellar resting and evolving, as they were brewed to age and stand the test of time. Each ID is a unique address, pointing to the rice farm that each comes from. A really unique opportunity to experience the terroir of Yamadanishiki and aging potential of sake. We will also be opening a bottle from Hidehiko’s new brewery, Nichi Nichi for a full comparative experience.
