Nichi Nichi Yamadanishiki

Nichi Nichi by Hide Matsumoto, who used to be the mastermind behind Matsumoto Shuzo, has a new brewery. Using Yamadanishiki from Grand Cru Yamadanishiki sites in Hyogo, the Nichi Nichi Yamadanishiki is a great representation of this new chapter. 

The sake is effortlessly complex, with Hide’s signature elegance, restraint and acidity.
