Salima and Alain Cordeuil, certified organic and biodynamic winemakers since 2015, are renowned for their natural methods. They operate in Noé-les-Mallets, a high-altitude village in Champagne’s Côte des Bar, known for its clay-limestone soils.

They produce a blend of 65% Chardonnay, which adds finesse, and 35% Pinot Noir, which provides structure. These grapes are sourced from 65-year-old vines in Val Prouse and Hauts de Morival.

Their winemaking process is entirely natural, involving spontaneous fermentation with indigenous yeasts, without any fining or filtration. The wine undergoes extended aging on lees for four to five years, primarily in stainless steel.

This Brut Nature style features zero dosage, with no added sulfites or sugar, highlighting the purity and expression of terroir. The tasting profile is celebrated for its precision and complex flavors, balancing fruitiness with minerality.

Aromas of blackcurrant, plum, violet, lemon, green apple, hazelnut, and sweet spices are notable, while the palate offers a creamy texture, bright acidity, and strong minerality, along with savory notes like mushroom.

This wine pairs well with seafood, meaty fish, or aged cheeses due to its depth and structure.
