Te to Te Junmai Ginjo Ginfubuki

Te to Te (Hand to Hand) by Nami no Oto. The next generation has come back to the brewery and launched a new brand. Local sake rice variety Ginfubuki, made with a lighter touch. Mineral, slightly salty (indicative of the rice variety) and bright acidity with gentle fruitiness. 

Technically a Junmai Ginjo but so much more nuanced.
