Utashiro Gekka

From Tenryohai brewery on Sado Island in Niigata. An ecologically unique island with strong government protections regarding fertilizer and pesticide practice, the rice grown here is very low in chemical use. By working with local farmers, the brewery is able to utilize locally grown, locally suitable crops with their local yeast and water. 

The water is sourced from Mt. Kinpoku, a short distance away. It is very high in calcium, resulting in a sake that is soft, pure and clear.
